Interested in learning the art of butchering meat? In this class, the butchers from Richmond's Belmont Butchery will breakdown a whole hog (well, actually a half!). We will start with the anatomy of a hog and what all the cuts can be used for. During the break down of the hog into retail pork cuts, we will demonstrate how to cook different cuts and feed you all sorts of porky deliciousness. Each participant will leave class with one or two fresh cuts of pork to take home and cook. We will go over basic sausage & bacon making. But will be saving detailed charcuterie making for another class!
