Chef Jon Mathieson is the chef for the Washington Redskins.

Jon Mathieson is entering his third season as the Redskins’ Executive Chef in 2015. Mathieson has more than 25 years of experience in the culinary industry. His responsibilities at the Redskins include menu creation, budget overview, training and overseeing the kitchen staff while working with the team nutritionist to provide healthy meal options. After graduating from the Culinary Institute of America in 1988, Mathieson began a dynamic career, starting as an apprentice under Chef Seppi Renggli at the Four Seasons in New York City, N.Y. His career also includes positions at La Laurier in New York City, the Homestead Inn in Greenwich, Conn., and New York’s acclaimed Le Bernardin. During his tenure as Chef de Cuisine at Lespinasse Restaurant in New York City from 1993-98, Mathieson learned the inner workings of a worldfamous restaurant, and over the course of five years rose from the position of Chef de Partie to Chef de Cuisine. During Mathieson’s tenure, Lespinasse received four stars from The New York Times, The Five-Diamond Award from AAA, and was rated the No. 3 restaurant in the country by Wine Spectator Magazine. In 1999, Mathieson accepted the position as Executive Chef at Stonehedge Inn in Tyngsboro, Mass. He developed a “new French” menu for Silks, the Inn’s acclaimed restaurant, and received rave reviews and national recognition, including a DiRona Award, three stars from the Boston Globe and four diamonds from the AAA. In 2005, Mathieson was the Chef de Cuisine at 2941 Restaurant in Falls Church, Va. Mathieson was instrumental in raising the level of culinary talent and cuisine at the restaurant, helping establish 2941 as one of the most recognized restaurants in the D.C. Metro area. From 2008-10, Mathieson served as the Executive Chef and Co-Owner of Inox restaurant in McLean, Va. After Inox, Mathieson served as the Executive Chef of Michel in McLean, Va., and later became Chef de Cuisine at BLT Steak in Washington, D.C., from 2012-13. Mathieson is originally from New York and now resides in Vienna, Va
